There are so many unique qualities to this particular fat. It is high in vitamin D (only pastured hogs raised outdoors will have this quality) and monounsaturated fats. It has an extremely high melting point, so it will not burn like butter when you heat it on high heat for searing or sautéing. Fat like this is hard to find.
